Walnut Salad with Honey Clementine Vinaigrette

Yep, it’s that time of year again – resolution time. Who has already made a dash to the local gym and signed up for a 5 year membership? We all seem to think that January is that magical month for us to get in shape and continue with that routine. Maybe that method works for some, but not us. Our elliptical has turned into a coat rack and 20 days into the New Year, Tinsley has already downed a full box of Golden Oreos.

We believe in resolutions, but our resolutions are always focused around eating better food. Our hope is for a healthy life style with a goal of eating more filling salads. In order for us to actually enjoy a salad, we had to come up with a knock out dressing and I think we did just that. Try it out and let us know what you think.

Ingredients:Walnut Salad with Honey Clementine Vinaigrette

  • 2 cups of chopped romaine lettuce
  • 5-6 red grapes, halved
  • 5-6 cucumber slices, cut into large matchsticks
  • 1/3 chopped walnuts, toasted
  • 1/4 cup feta cheese, crumbled
  • 2 clementines, one peeled/ segmented and one juiced
  • 1 tsp Dijon mustard
  • 2 tbsp honey
  • ½ olive oil
  • salt and pepper

Directions:

Add greens to a serving bowl and arrange veggies, fruit and cheese on top. In a medium bowl, whisk together the honey, clementine juice and mustard. Whisk in the oil in a slow stream, until the dressing becomes thick. Season with salt and pepper and drizzle down over the salad.

Store the extra dressing in an airtight container in the refrigerator for up to 1 week.
