Classic Fruit Salad

Looking for the perfect side dish to complement an easy grilled chicken or salmon dinner? Use up your weekly left over pieces of fruit by making a simple fruit salad. All you need to do is slice up some fruit, throw them into a bowl, dress it up with a little lime, and call it a salad. That’s how I came up with the recipe below.

Ingredients:Classic Ffruit Salad

  • 2 clementines, peeled, separated and seeded
  • 1 apple – peeled, core and cubed
  • 1 firm pear – peeled, cored and cubed
  • 1/2 can of sling peaches, cubed
  • 1/2 juice from the cling peaches
  • 1/2 cup of red grapes – cut in half
  • 1 lime – zested and use 1/2 for juice and other half, sliced for garnish
  • 1/4 cup of maraschino cherries
  • salt

Directions:

In a medium size serving dish, add all fruit.  Lightly toss together with your hands.  Add the zest of the lime.  Cut the lime in half and juice one 1/2 over the fruit.  Add in 1/2 of the juice from the canned peaches.  Toss together again with your hands.  Lightly salt.  Arrange the fruit for presentation and garnish with maraschino cherries and sliced lime.  Dig in!
